What is a dirty soda? (the Utah drink that finally made it to Austin)

If you have ever watched someone pour coconut cream into a Dr Pepper and wondered what was going on, welcome. That is a dirty soda, and it is the whole reason Austin Soda Social exists. It is also the first question we expect to hear at the bar, so here is the honest, slightly nerdy answer, from the Utah origin story to how we build one for a crowd.

Dirty soda

A dirty soda is a soft drink "dirtied up" with add-ins: flavored syrup, cream or coconut cream, fruit purée, and citrus, poured over a base soda like Dr Pepper, Coca-Cola, or Sprite and served on ice. The term was popularized by the Utah chain Swig, which trademarked "dirty soda" in 2013 according to Wikipedia. It contains no alcohol.

Where did dirty soda come from?

Dirty soda was born in St. George, Utah, in 2010, when Nicole Tanner opened the first Swig drive-through. According to TODAY's Alex Portée, Tanner was inspired by trips to Sonic Drive-In and wanted a place built entirely around customized fountain drinks. Al Jazeera's 2026 feature on the trend adds that she was chasing the Starbucks model, endless personalization, but for soda instead of coffee.

The name came from one menu item. When Swig added a Dirty Dr Pepper, Dr Pepper plus coconut syrup, the word "dirty" became shorthand for any soda with something extra in it. Wikipedia notes that Tanner trademarked the phrase in 2013 once copycats started popping up.

Why Utah? The state has a large population of members of The Church of Jesus Christ of Latter-day Saints, whose guidance advises against alcohol, coffee, and tea. Soda was never on that list. Wikipedia and TODAY both point to that cultural gap as the reason soda shops became the local version of a coffee shop or a bar: a place to meet up and order something fun. Competitors like Sodalicious, Fiiz, and Thirst Drinks spread across Utah and neighboring states through the mid-2010s.

We love this origin story because it is exactly what we want to bring to Austin. A soda bar is a social hub that does not need alcohol to feel like a party.

What goes into a dirty soda?

A dirty soda has four building blocks: a base soda, a flavored syrup, something creamy, and a fresh finish. That is it. The magic is in the combinations.

• Base soda. Dr Pepper and Diet Coke are the Utah classics, per Wikipedia. We pour Coca-Cola, Diet Coke, Dr Pepper, Sprite, Fanta, and root beer on our menu.
• Syrup. Coconut, vanilla, cherry, and strawberry are the workhorses. We also run watermelon, peach, raspberry, toasted marshmallow, and caramel.
• Cream. Half-and-half, coconut cream, or vanilla cream. Cold foam, a lightly whipped cream layer that floats on top, is the newer move and photographs well.
• Fresh finish. A squeeze of lime, a cherry on top, or, if you are feeling bold, a swipe of marshmallow fluff.

Pebble ice is the unofficial fifth ingredient. TODAY describes dirty sodas served "over pebble ice" in clear plastic cups, and the milky swirl of cream meeting soda is a big part of the appeal. We build every drink to order, so guests watch the pour.

One note: this is a dessert-adjacent drink, sweet on purpose. Ask for a diet base and a lighter hand on the syrup if you want something closer to a refresher.

Why did dirty soda go viral?

Dirty soda went viral because of one Instagram post and a TikTok hashtag. In December 2021, Olivia Rodrigo posted a photo of herself holding a Swig cup, having picked up the habit while filming in Utah, according to both Wikipedia and Al Jazeera. TikTok ran with it. Wikipedia reports that by April 2022 there were more than 700,000 videos under #dirtysoda.

The trend kept climbing. Al Jazeera reports that after The Secret Lives of Mormon Wives premiered in 2024, Yelp searches for dirty soda jumped by more than 600 percent year over year, and that Swig now operates more than 160 locations across 16 states. Big beverage companies took notice: per the same feature, PepsiCo, Coca-Cola, Keurig Dr Pepper, and Nestle have all introduced ready-to-drink dirty soda style products, and Wikipedia notes a 2024 Coffee-Mate and Dr Pepper coconut lime creamer built specifically for the trend.

What makes it so shareable? It is visual, it is customizable so everyone can have "their" order, and every guest can order one, from the flower girl to the designated driver.

How is a dirty soda different from an Italian soda or a float?

A dirty soda starts with a flavored soda; an Italian soda starts with plain club soda; a float starts with ice cream. They are cousins, not twins.

Mashed puts the Italian soda side plainly: it is "club soda and a flavored syrup," while a dirty soda is "any soda or 'pop' with cream, fruit or a fruit purée, and/or a syrup." Tasting Table describes the dirty soda as the Italian soda formula with "the club soda swapped out for something like Dr. Pepper, Pepsi, or Mountain Dew," and it flags the newer fluffy soda trend, where the inside of the glass is coated in marshmallow fluff before the soda goes in.

What are the most popular dirty soda combos?

The classic dirty soda is Dr Pepper with coconut syrup, cream, and lime, built on Swig's original Dirty Dr Pepper (Dr Pepper plus coconut syrup, per Wikipedia and TODAY). After that, it splits by personality. Here are the signature drinks on our menu:

1. East 6th. Dr Pepper, vanilla, coconut cream, fresh lime. This is our take on the original Dirty Dr Pepper, and it is the one to try if you have never had a dirty soda.
2. Austin Classic. Coca-Cola, cherry, vanilla cream. A classic pairing, and a good starting point for anyone who prefers cola.
3. Waterloo. Sprite, watermelon, and a cloud of vanilla cold foam. Summer in a cup, and built to photograph well.
4. Alright, Alright, Alright! Cherry-lime Sprite. Bright, bubbly, no cream, and a good option for guests who prefer their soda without cream.
5. The Longhorn. Orange Fanta and vanilla cold foam. A creamsicle you can cheers with.
6. Dazed & Confused. The campfire root beer float described above.

Beyond the signatures, we run a build-your-own station: pick a base, a syrup, a cream, and a garnish. Coke with raspberry and vanilla cream, Sprite with peach and coconut cream, Diet Coke with lime and nothing else. There is no wrong answer. A few practical notes from the Austin side of things:

Is dirty soda a fad, or is it here to stay?

Dirty soda has already outlasted the trend cycle. It is 16 years old, it survived the TikTok wave and came out bigger, and Al Jazeera cites an industry estimate valuing the category at $1.1 billion as of 2025.
